Steven Fretz's The Church Key to Open This Month with American Dim Sum and More

Chef Steven Fretz (Top Round, XIV) is gearing up to open The Church Key, a modern American dim sum spot in the long vacant restaurant space near Eveleigh on the ground floor of 8730 Sunset. By his side is GM Joseph Sabato (The Bazaar, XIV), chef Ryan Ososky (XIV), pastry chef Ian Opina (Hatfield's), and handling all things booze comes celebrated barman Devon Espinosa (Pour Vous, ink., The Tasting Kitchen), mixing 'funked up' classics that may or may not come with a take-home bottle opener.

American dim sum? Yes. The melting pot American menu bears influence from around the world in dishes like Jidori chicken tikka masala and potato pierogies with bacon jam. There will be an a la carte menu in addition to roaming dim sum-style food carts from which one can order daily specials, charcuterie, plus dessert and drinks. Again, more fusion eats from falafel croquettes with truffle tahini to pig ear "Cheetos." This is an entirely new concept to hit LA, though one that has proven successful at San Francisco's State Bird Provisions.

Construction is still ongoing, though once complete The Church Key will aesthetically combine mismatched chairs with rustic tables and booths, and vintage accents. Rooms will be sectioned off via large curtains.
