Roy Choi is credited with fusing Korean flavors in Mexican dishes, and as of yesterday a new Long Beach eatery is following suit. Seoulmate is not a Korean dating service, rather a small (pink) Korean cafe which replaced kosher sandwich spot Mosher's Gourmet at 4712 E 7th St. in Long Beach. Operated by Jason Kang, the quick serve hut is plating up Korean staples like bibimbap and Mom's Kimchi Pork Stew, but also bulgogi and spicy pork burritos.
