Caity Wallace had hoped to open her Celtic cafe The Wilde Thistle back in August, but contractor and inspection issues continue to delay her launch. The good news is that her CUP to sell beer and wine was approved last week, which means that when The Wilde Thistle does launch later this month or in early January, patrons will have the option to pair a scone with craft beer or wine.
