Gentleman's Butcher Shop & Delicatessen replaced Victor's Meats & Delicatessen in Palms over the summer and new owner Wanju Leesong has since upped the shop's meat game. As of a few days ago, Gentleman's has started selling Akaushi beef, part of the Wagyu breed of cattle prized for its richly marbled fat. GM/butcher Chris Fuller says this is the only place on the west coast selling Akaushi beef, and right now rib eye, New York strip, Denver steak, and ribs are up for grabs. [EaterWire]
