Peter Roelant of L'Orangerie and Four Oaks is settling down as the cuisine at Brand 158, a sort of newfangled, elevated CPK centered on California cuisine but pushing pizzas as its main attraction. Not too long ago management was looking to hire pizza crafters for a December launch. So if those lines at The Americana's newbie Din Tai Fung prove too long, soon another nearby dining option.
