Signage is up for Trencher in Echo Park, a new sandwich shop on Portia Street slated to open this month. With its not-so-obvious moniker, Trencher is named after a sort of Medieval plate thing that was made from stale bread cut into a square. Similiar to an open-faced sandwich, hence this sandwich shop's name. The Eastsider says that owners Hussein Katz, Danny Zackery and Justin Foster will indeed offer an open-faced sammie, in addition to a burger, brisket sandwich, tofu banh mi, and pulled pork sliders.
