Earlier this year came word that The Langham hotel's two-year-old fine dining restaurant, The Royce, a highly regarded white tablecloth New American place, was fated to shutter. And word just in that The Royce | Wood-Fired Steakhouse will open in its place on March 15, cheffed by Anthony Zappola who spent the last eight years working at Tom Colicchio's Craft Restaurant Group. Zappola most recently served as chef de cuisine at Craft in LA.
The Royce's new steakhouse self will serve an impressive-sounding list of aged American Prime Beef, Australian Wagyu and Five Star Grade Japanese Kobe cuts cooked on a wood-fired grill over White Oak and "seasonal wood." With turf comes surf, so also expect a bunch of seafood preps and veggie sides.
For the most part, The Royce's aesthetic will remain unchanged save for the addition of a communal table in the main dining room and seating in the red wine room.
