News of one udon place in Little Tokyo's burgeoning noodle scene follows another. Lunch maniac Zach Brooks of Midtown Lunch reports the impending replacement for the short-lived Fat Spoon, adjacent to the ever-popular Daikokuya, will be called Marugame Monzo. The noodle specialist touts a completely handmade approach to udon, which isn't common in L.A. at the moment. That means freshly cut noodles made from Japanese wheat, house-made broth made from scratch, and a variety of condiments. Management says that they're hoping to open some time next month. [MTL]
