After years in the making, baker Erin Zabel is ready to open Cookie Casa, a small bakery and coffee stop next to House Cafe on Beverly Boulevard. Best known for her molasses ginger sandwich cookies, Zabel also serves softly baked chocolate chip cookies, sugar cookies, plus a bevy of bars, muffins, and cakes. Cookie Casa still plans to open on February 11.
