Chef Ricardo Zarate and business partner Stephane Bombet's hotly anticipated ode to the Amazon, Paich?, debuts to the public on April 2 at 11:30 a.m. Remember, this is Zarate's take on Peruvian izakaya with a heavy Amazonian influence throughout the menu. The restaurant itself is named after Paich?, prehistoric Amazonian fish that was rescued from extinction by the Peruvian people.
Anyway, Ricardo and Stephane are opening up doors a little bit early to the public, on March 29, for an early taste. To nab a seat email name, party size, contact number, and preferred dining time to lottery@paichela.com by 8 p.m. on March 25 for a chance to score early access. They will select resy winners at random.
