KC Ma's Umaya Ramen soft opened in Cerritos last night. After Ma passed away last winter, restaurant partner Jane Hwang quickly hired a consultant and brought aboard chef German Metz. An ABC type 41 license has been applied, which means booze. Word is that Umaya will also open for lunch soon. On the menu there are mostly tonkotsu ramen along with one of the most treyf dishes ever seen in LA: a seafood topped tonkotsu ramen, which Ma originally envisioned to be in the Asahikawa style.
