Today at 11 a.m. Sayuri Tachibe — who started as a hostess at Chaya Brasserie in 2002 and went on to marry Chaya corporate executive chef Shigefumi Tachibe — opens Osawa, a Japanese restaurant on N Raymond Avenue focused on shabu shabu, sushi, and otsumami (Japanese tapas). She has hired Norio Yoshikawa (Katsuya) to execute dishes like Grilled Hokkaido Scallop with Nori Pesto Butter, Tender Beef Tongue and Furofuki Daikon with Shaved Kelp, and King Salmon Ceviche with Yellow Chili Lemon Soy, a step up from previous longtime Japanese tenant Shaab. Hours of operation to run Tuesday through Sunday from 11:30 a.m. to 2:30 p.m. for lunch, and Tuesday through Thursday from 5 to 9:30 p.m., Friday/Saturday from 5 to 10 p.m., and Sunday from 5 p.m. to 9:30 p.m. for dinner.
