Good news for fans of cured meat. On May 28 a longtime FDA embargo on Italian cured meats will be lifted, allowing products from small producers to finally enter the US. Mozza's Nancy Silverton says she's happy about this progress and that, "We get pretty good prosciutto now but there are so many great small producers over there, and we've never been able to get culatello."
