Prior to opening Trois Mec, chef Ludo Lefebvre tells Haute Living that he was actually looking to do "a little fried chicken concept" with partners/chefs Jon Shook and Vinny Dotolo (Animal, Son of a Gun). "I wanted something that would bring good hospitality to my guests but not in a frou frou way." And on the subject of future expansion, the chef explains that right now it's too early, "I won't look at anything for six months perhaps until this space is settled." [Haute Living]
