With The Foundry's temporary shutter in full effect, it's time to turn attention to skinny next door neighbor Greenspan's Grilled Cheese, the long awaited melted cheese sandwich place from vociferous chef Eric Greenspan. Remember, this is a concept born from a Grilled Cheese Invitational win back in 2008 thanks to a Taleggio cheese, short rib, arugula and apricot caper purée on raisin bread creation. Spacecraft has been onboard to design this project from the early days and, up above, a look at what the narrow eatery will look like come July.
It's a simple scheme, with maybe a few tables up front and a long counter in the back flanking a parallel eating ledge. But the question remains whether Greenspan will bring back his salty sweet explosion gut bomb of a sandwich, the triple decker Monte Cristo: white bread with corned beef, cheddar, turkey, Gruyère, maple mustard, which is then dipped in French toast batter, deep fried, and dusted with powdered sugar. Peach black pepper marmalade on the side.
