Here now a little bit more on V's Restaurant + Bar, the new eatery in development on the PCH where Charlie's once resided. A project from partners Vassil Pertchinkov and Yassen Tonev who together worked at Guido's in Malibu, Pertchinkov will run FOH and serve as GM, meanwhile Tonev will head up bar operations and oversee the restaurant's list of fresh fruit cocktails.
Executive chef Chris Bocchino (Terra) is looking to source local Malibu product from One Gun Ranch, Thorne Family Farm and Vital Zuman, in his California-style menu with Italian essence. Think house-made pasta and pizza, some smoked fish and meats, about two to three daily changing seafood dishes, plus a grilled dry-aged veal chop, filet mignon, and a bone-in rib-eye will grace the menu. His wife, pastry chef Kristine Bocchino, was in command of desserts at Paul Shoemaker's shuttered Savory and also operates her own Malibu-based baking company, Cal Fresco. V's is still on schedule to open this summer.
