Pie Society in Costa Mesa Starts Mixing Drinks on June 8

Orange County lands a new cocktail bar on June 8 when Pie Society — the "secret" speakeasy at Costa Mesa's Pitfire Pizza — debuts. Expect craft cocktails, premium spirits, and a food menu by Superba Snack Bar chef Jason Neroni . Accessed through the Community Kitchen, the bar, helmed by Steve Garcia, was inspired by the spot's previous tenant, Marie Calender's. Garcia (Mesa, Broadway by Amar Santana) will be stirring, shaking, and mixing up artisanal cocktails and housemade cordials that draw from classic recipes as well as modern interpretations that use fresh, seasonal produce.

House specialty libations include the Piesobar House Martini, shaken with Ford's gin, Wodka Vodka, cocchi Americano, Dolin blanc, bergamot, and lemon peel ($12) and the the Boson Sour, made with bourbon, rye, lemon, syrup, egg white, bitters, and orange zest ($10). The food menu boasts items like Neroni's Superba Fried Chicken, a Cheeseburger Hot Pocket, and Crispy Dim Sum Shrimp with black sesasme sweet mayo.

Conceived by Pitfire's Paul Hibler, the speakeasy will have a relaxed, neighborhood feel with dim lights, wood floors, and leather lounge furniture for comfortable imbibing with no pretense. Hours of operation will run 5 p.m. to late, Thursday through Sunday.
