Mills has gained acclaim for his charcuterie and house-made condiments, and he writes in to say that he decamped to open his own charcuterie business. Mills hopes to sell his "potted items in the next couple of months" and he has "been talking with the USDA about laws for selling dry, cured items." Meanwhile, Julie Robles, the original chef de cuisine at Tavern, is back at the helm with Suzanne. [EaterWire]
