Steven Fretz Cheffing New Restaurant at 8730 W. Sunset

Steven Fretz, former executive chef at XIV and partner/chef at Top Round, has signed on as executive chef at the still unnamed eatery forming within 8730 W. Sunset Blvd. right between Eveleigh and Victor Drai's Rare. This space has remained vacant for a while, previously attached to other chefs and operators. But, Ginza Project (Mari Vanna) is now in charge, with Fretz at the culinary helm, working alongside chef de cuisine Ryan Ososky (Fretz's right hand man from XIV days).

At the moment Fretz is keeping details to a minimum, but he states that the restaurant will open in October with a core food and service focus new to Los Angeles. There will be an a la carte menu, in addition to another unique form of dining practiced by one restaurant in San Francisco. That's all for now. [ELA]
