Matthew Kang is the Lead Editor of Eater LA. He has covered dining, restaurants, food culture, and nightlife in Los Angeles since 2008. He's the host of K-Town, a YouTube series covering Korean food in America, and has been featured in Netflix's Street Food show.

THE MIRAGE— Tom Colicchio opened his long-awaited Heritage Steak inside the Mirage, with full menu reveals to go along with 11 things one might not have known about the establishment. That 10 oz Wagyu ribeye looks mighty tasty.

AROUND TOWN— Eater Vegas puts together a handy guide to dining around town during Las Vegas Restaurant Week, which features the likes of BarMasa, Bradley Ogden's Hops & Harvest, Rick Moonen's Rx Boiler Room, and more. The eight day event starts today.

MANDALAY BAY— A local food critic airs some grieves against Fleur by Hubert Keller, writing, "Why are you an entirely different restaurant during the daylight hours, yet still billing yourself as a tapas joint? I get serving a "simplified" menu at lunch — especially in a tourist destination like Vegas — but does it have to be stupid, too?" It's an ode to Eater NY's Shitshow Week.

GANSEVOORT— News of Giada de Laurentiis' Cali-Italian restaurant hit with a sneaky look at the upcoming resort's website source code. The Studio-Collective designed space will hold 300 diners.

DOWNTOWN— Opening Lavo chef and current Trois Mec proprietor Ludo Lefebvre is opening a restaurant called Le Station Oyster Bar with a co-owner of Le Thai. Like Trois Mec, Le Station will have a ticket system.
