The SoCal-based 1940s themed Ruby's Diner chain is remodeling with a new aesthetic inspired by the 1960s and Los Angeles' Googie architecture. CEO Doug Cavanaugh is expanding the chain with three prototypes: a Ruby's Dinette opening at a Westfield mall food court in San Diego, a fast-casual Ruby's Deluxe headed to Costa Mesa, and a full service Ruby's Diner planned for Laguna Hills.
