Cesar Bermudez, the uber talented opening pastry chef at Flores on Sawtelle, has decamped to head up baking operations at Café Rockenwagner, the new restaurant and bakery at The BW in Brentwood from Hans Röckenwagner (Röckenwagner Bakery, 3 Square Café). Previously, Bermudez served as executive pastry chef at the SLS Hotel in Beverly Hills. Right now he's perfecting sweets like Cro-doughs, caramel eclairs and raspberry lemon tarts. Rockenwagner's savory contributions include avocado fries; a cast iron burger with provolone, shiitakes, onion rings and miso-Russian sauce; and a pan-roasted red snapper. [EaterWire]
