Under that new January 1 food safety law which prohibits cooks from touching food with bare hands, it's also now mandatory for bartenders who handle fresh herbs, ice and other ingredients to wear gloves or use utensils when crafting drinks. Cocktail chef Matthew Biancaniello, known for his exotic multi-ingredient seasonal libations, told the LAT that he has worn gloves in the past, but "felt really suffocated." Continues Biancaniello, "But the gloves thing, even when I go to buffets and see it, I flinch a little and think 'hospital.'" [LAT]
