Cavatina, the restaurant from Boston-based chef Michael Schlow of Top Chef Season One (who also carries James Beard and Food & Wine distinctions), will finally debut to the public this month, just before the Grammys (January 26), after a period of private preview dinners. Since Schlow still needs to oversee his east coast restaurants, here in LA Sunset Marquis executive chef Roger Eggleston (formerly of 10 Pound in the Montage BH) will oversee day-to-day operations and execute Cavatina's seasonal California/Mediterranean menu, which some bloggers have already sampled.
The dinner menu is broken up into a few sections offering snacks, crudo, small plates and entrees like Cauliflower Panna Cotta with Lobster and Caviar; Beef Tongue with Lentils, Rosemary, and Salsa Verde; and Mediterranean Sea Bass with Shaved Vegetables. Not restricted to just dinner, Cavatina will also push breakfast and lunch and feed sunbathers around the property's pool. Room service, too.
