Vic Casanova and Seth Glassman Gunning for Pistola

Recently, a detail was leaked from a PR email regarding a new project by Vic Casanova, who first broke out at Culina and now helms the kitchen at Gusto on West Third. Partnering with Seth Glassman, former GM of Chi-Lin and Rivabella, the duo is planning a restaurant called Pistola, or pistol in Italian, with an opening slated for April 2014. According to PR, Glassman had decamped from IDG last August after a nearly ten year run with the company. Considering Casanova's mastery of the cuisine and Glassman's experience at RivaBella, the concept will no doubt reflect the cooking of the Italian peninsula. Though a location has not been confirmed, it's long been suspected that Casanova will take over the old AOC space on West Third.
