mar'sel, Terranea Resort's fine dining establishment on the bluffs of Palos Verdes, has a new chef in town. Once commanded by Michael Fiorelli of the upcoming Love & Salt, mar'sel has named Charles Olalia as Chef de Cuisine of the romantic dining destination.
This is an exciting move for the resort, as Olalia was once executive chef at Patina and aims to infuse his Filipino heritage into the restaurant's market-driven California fare. Olalia's refreshed menu offers the likes of Dungeness Crab Chaud Froid with apples, walnut and pomegranate; Red Snapper in a banana salt crust with pickled papaya, coconut rice and lemongrass buerre blanc; Local Squid Adobo with Spanish vermicelli, jalapeno and bread puttu; and Gateaux Sans Rival, almond dacquoise, and rhum buttercream.
