Test Kitchen's unnecessarily secretive methods are back, this time with the pre-launch of a new barbecue concept from Bill Chait and Timothy Hollingsworth called Barrel & Ashes. Recently referred to in his puff piece profile in LA Magazine, this barbecue concept takes over the former Spark Woodfire Grill on Ventura Blvd in Studio City, adding yet one more unique place to eat in the burgeoning Lower Valley. Though there's another big name chef pegged to the restaurant (tba), this project makes sense given Chait and Hollingsworth major barbecue bender in Texas earlier this year, plus the duo's pop-up at Chait's Short Order during the summer.
If you want to attend one of these super secret preview dinners, sign up for the mailing list at the restaurant's website, whereupon you will receive a confirmation for parties of 2 at either 6 to 8:30 p.m. every night this week. But don't forget the fine print: there's no entry without a reservation and the password (what kind of speakeasy would it be without a password).
The food will be full priced, with a craft beer and cocktail menu. The Test Kitchen email says (in a very helpful way) that food prices range from $4-40, with cocktails starting at $12. And since everything is still in secret soft opening mode (despite full price), they expect everyone to stay off social media. Yes, that means no cell phones (they tell you to either leave it your pocket/purse or in the car.
