Petit Trois has been lauded for many things, including well-executed bistro fare served in a casual room. One of the foundation of Ludo Lefebvre's menu is this pitch-perfect omelette, which relies on some top notch ingredients (like an egg "straight out of a chicken's ass") to some unusual ones (black pepper Boursin cheese).
