Carb & Nation is a cheffy sandwich shop on wheels soft rolling now (today at 26th and Pennsylvania in Santa Monica) but officially debuting on April 3 at a Tastemade event. In addition to house-made sodas in flavors like lime-ginger-thyme, former Church & State sous chefs Fata Wijaya and Kevin Micheli are selling a shrimp bun with Indonesian curry, lettuce, mango, cilantro and shrimp crackers; and an achiote-marinated chicken flatbread with mole, cabbage and poblano slaw, lime, avocado, and ricotta salata.
