On March 11 at 5 p.m. Old Town Pasadena scores a taste of chef Bruce Kalman (Urbano Pizza Bar, The Churchill) via Union, his ode to Northern Italian cuisine by way of California with help from partner Marie Petulla. The 50-seat restaurant and bar right next to Pop Champagne Bar on E. Union Street, licensed to pour beer and wine as decided by sommelier George Pitsironis, will turn out seasonal, rustic plates using whole hog butchery in dishes like Ricotta Crostini with Pickled Onions and Pancetta; Orecchiette with "Head and Shoulder" Pork Ragu and Gremolata; and Spring Lamb with Grist & Tool Grains, Romesco and Pickled Green Garlic. Pastas are made in house, as is charcuterie. To start Union will offer just dinner, with lunch and brunch to follow.
