Opening chef Ressul Rassallat is no longer helming the kitchen at Tapenade, the West LA Mediterranean restaurant within The Olympic Collection open for over a year now. Former Sunset Tower Hotel executive sous Tri Nguyen has moved in with a reworked bill of fare that stays true to the eatery's Mediterranean roots. Some original Tapenade favorites remain on the menu, but Nguyen has expanded eats with new additions like Israeli couscous with black currants, pine nuts, herbs and lemon vinaigrette; chicken thigh rillette with harissa, cinnamon, and red wine cherries on rosemary bread; and osso bucco fettucine with red wine veal sauce, chives and parmesan.
