Exciting news in today from the Flores team. As of yesterday, talented opening chefs Angela Hernandez and Rob Lawson (The Bazaar, L'Atelier de Joel Robuchon) are no longer affiliated with the rustic Sawtelle haunt and in their place chef Brian Dunsmoor and FOH handler Jonathon Strader of The Hart and the Hunter have come onboard to overhaul eats. But do keep in mind that although the duo will be firmly planted at Flores, they're still very much part of The Hart and the Hunter and the restaurant will continue to be co-cheffed by Dunsmoor and chef/partner Kris Tominaga.
Dunsmoor is especially excited to cook in a proper full kitchen. Over at The Hart and the Hunter he has been working with a makeshift setup since the Palihotel space was never really intended to serve as a full restaurant.
Right now Flores is shuttered while Dunsmoor finalizes his ingredient-driven, farmers market menu with both French and Southern influences. Don't expect to find The Hart and the Hunter's famed biscuits here, all dishes will be totally new, set to launch later this month. [EaterWire]
