Seriously, Greenspan's Grilled Cheese Opens April 11

Almost five years in the making, facing delay after delay, former Foundry chef Eric Greenspan is FINALLY launching his long awaited grilled cheese restaurant aptly named Greenspan's Grilled Cheese on April 11. A concept prompted by a win at LA's Grilled Cheese Invitational back in 2008. And yes, that winning sandwich composition of taleggio cheese with short ribs, arugula and apricot caper purée on raisin bread graces the menu, along with some other pretty great combos like rye bread with blue cheese, spicy carrot-celery slaw and fried chicken tenders. Awesome. Three salads can be customized with a choice protein (chicken, tuna salad, bacon), and for dessert one will find s'mores and The Elvis: white bread with goat cheese, banana and peanut butter. Bacon, too. Expect seasonal sandwich additions in the future.

It's also worthwhile to note that although Greenspan's Grilled Cheese does not serve alcohol, the adjacent Melrose Umbrella Company, previously home to Greenspan's Foundry, does. And diners can buy a sandwich and consume it next door along with a quality cocktail.
