Chef Freddy Vargas, who recently took away a win on Esquire Network's Knife Fight, decided something needed to be done about the extra kitchen space. Hence, Paninoteca, a brand new sandwich shop that opens up right where the kitchen stands in Scott Conant's Scarpetta in Beverly Hills. Think porchetta with fried egg, chicken parmesan, housemade chips, and fresh juices. So, perhaps a little along the lines of ink.sack, but from an Italian slant. Soft open today, with everything priced around $10 and open 11 to 3 p.m. on weekdays. Check out the menu here.
