Eater National sits down with Suzanne Goin, chef of Tavern, Lucques, and A.O.C., about the development of the L.A. dining scene in the past 15 years. Says Goin: "I feel when we opened, things were either sort of fancy or they were really casual. There wasn't this in-between way, this in-between thing — that for me feels very LA — of delicious, simple, casual food, but in an atmosphere that's beautiful and you feel good in it." [-E-]
