Zack Pollack's Alimento Shooting Toward Late June Debut

Alimento, the much anticipated eatery in Silver Lake from Zach Pollack (Sotto), is just about a month away from opening, according to a walk through today. The former Back Door Bakery slot will accommodate about 40 diners inside and 15 on the patio, which stretches out a bit onto the sidewalk. Inside, most of the main interior pieces seem to be finished, while some equipment and last decor pieces are waiting to polished off.

Meanwhile, Pollack is coming off a 12 day run through Northern Italy, which will be a main source of inspiration for the cooking, though Alimento will not adhere strictly to those regions. The chef, who's venturing on this first solo project, has remarked that pasta extruders in the kitchen will allow him to show some more Southern Italian flare on the menu. Get ready Silver Lake, because this will likely be the newest hot spot on the block.
