Greenspan's Mole Lamb Shank at The Roof on Wilshire

Eric Greenspan's been quietly changing the roof top dining scene at The Roof on Wilshire, a pretty spot overlooking the heart of Mid-City. Just in time for The Five Days of Meat, Greenspan has launched a brand new menu, with this mole-glazed lamb shank at the center of it. It's an elaborate construction, first with the sauces, then mole gremolata infused with juice. It all goes on a bed of goat cheese masa and a side of heirloom summer squash for the perfect sunset dish in LA.
