Raw, Vegan Resto Headed to The Springs Downtown

Racked LA shares some details and a few in-progress photos of the forthcoming raw, vegan, all-around holistic center known as The Springs, heading for an August debut Downtown. As the images show, the sprawling space will be taking over a hefty chunk of real estate in (where else) the Arts District, specifically on (where else) Mateo St.

The Design, Bitches team, who also gave Hollywood's Oinkster its shine, are still working on the space, but in the meantime chefs Michael Falso and Ian Martin are working on a 100% raw, vegan restaurant.

Says co-owner Kimberly Helms: "The processes used in creating our food include juicing, blending, soaking and dehydrating: nothing is ever heated over 108 ̊." There's even going to be a grab and go section for premade meals, vegan ice cream, tonics and a cold-pressed juice bar. Think of it as "a speakeasy for juices," says Helms.
