Tear Into Chris Oh's Colombian Ssam at Escala

Chris Oh's been quietly putting together a solid collection of Colombia dishes at Escala, his new Koreatown restaurant on the corner of Chapman Plaza. For The Five Days of Meat, Oh is preparing a special Colombian ssam, an ode to his Korean roots and the context of the restaurant right in the heart of Koreatown.

To prep this dish, the Seoul Sausage Co chef marinates the whole beef rib over night before throwing into a braise for about 8 hours. Served with a side of coconut rice, black beans, and avocado lime creme, it's best to take apart the lettuce wraps and dab a bit of salsa. Bring a friend to share it with because the $28 entree is definitely big enough for two. The Colombian Ssam will be available at Escala starting Thursday through Saturday until it sells out.
