Cadet, Jeff Weinstein and Kris Tominaga's Rustic Project

Matthew Kang is the Lead Editor of Eater LA. He has covered dining, restaurants, food culture, and nightlife in Los Angeles since 2008. He's the host of K-Town, a YouTube series covering Korean food in America, and has been featured in Netflix's Street Food show.

Remember when Charlie Parker was supposed to help transform Santa Monica's The Shack with partner Jeff Weinstein? Well, the Counter and Freddy Smalls owner has been working instead with with Kris Tominaga, formerly at the Hart + The Hunter on a new spot called Cadet. The two have been sneaking teasers onto their respective Instagram accounts for a few weeks now, but the word from above is finally here. Opening early October, Cadet is a casual neighorhood spot (much in the vein of Freddy's), with a massive wood-burning grill and oven as the kitchen's centerpiece.

As for the fare, consider French countryside classics that depend heavily on that hearth. Cocktails will also focus on classic bar recipes, which is fitting for a kind of restaurant that feels like an old, trusty friend. Also expect indoor and outdoor seating for about 100 people. Also, expect a heavy golden elephant motif, which is certainly a strange thing to emphasize.
