Following news last week that both Lincoln Carson and Jason Travi were departing Superba Food + Bread on Lincoln in Venice (both note that the split has nothing to do with Superba itself, but the option for sweetheart deals elsewhere), Westside diners have been eager to hear about the popular restaurant’s sophomore chef efforts. Now it looks like we’ve gotten some confirmation, alongside a high-level overhaul of Paul Hibler’s own restaurant group.
Below, a statement from Paul Hibler himself:
We’re incredibly excited for the future of Superba. As a bakery, restaurant, and coffee bar, Superba Food + Bread has been an ambitious project from the get-go. We're incredibly lucky to have worked with Jason Travi and Lincoln Carson who have done an amazing job helping us realize the vision of the project and making it what it is today. For us, Superba is about much more than just offering delicious food. It’s about creating an inspired experience.
In order to stem the recent rash of defections, Superba is bringing on Jennifer Toomey as new exec chef. Toomey previously worked at Milo and Olive as executive sous chef. David Rex comes by way of Stella Barra to take over general manager duties and, in perhaps even more surprising news, CB Gersch of Eureka! Restaurant Group and Hillstone is embarking on a new path as overall CEO of Hibler’s American Gonzo Food Corporation.
In all, it’s a big change for Superba Food + Bread and Hibler’s restaurant group overall, which is happy to shore things up after two high-profile back of house losses. All three will be taking over immediately.
