Classy Livello at the L’Ermitage Hotel in Beverly Hills is no more, as the Viceroy-backed hotel property undergoes a massive renovation that will see their dining landscape change rather drastically. In its place comes Avec Nous, with plans to lean towards the contemporary French crowd.
Where Livello was a well-received modern Italian restaurant, Avec Nous has plans to fall squarely into the bistro genre, serving refined French fare in a slightly more casual (this is Beverly Hills though, so nothing too low-key) environment. The whole revamp comes as the hotel invests several million dollars into upgrading the property as a whole, which means the new restaurant won’t come online until sometime in January.
Opening chef for Avec Nous will be Olivier Quignon, who previously worked as the executive chef at Bar Boulud in New York City. Prior to that, Quignon was chef de cuisine at DBGB, when he chatted with Eater about his relationship with Boulud, and what it means to survive a weekend doing 1,000 covers.
Avec Nous should arrive at L’Ermitage in Beverly Hills by mid-January.
