Word is starting to trickle out about Gwen, the hush hush Hollywood concept by way of Maude’s Curtis Stone and none other than Chad Colby, who previously earned heaps of praise at Chi Spacca. The name, its said, comes from one of Stone’s grandmothers.
Per LA Weekly, the restaurant will be predictably meat-focused (Colby has a way with animal proteins, and it would also be a nice departure for the more vegetable-slanted Maude menu Stone is used to), with loads of charcuterie on offer. Apparently there will also be a butcher shop built right into the concept, while the restaurant menu itself will be based around lots of live fire cooking.
The space itself will require a massive build-out, which sources say is just getting underway now. Home Studios will oversee the transformation of the side-by-side former Mercantile and Township spaces, right on Sunset Boulevard.
Now if only there were news on that other nearby Hollywood waiting game, the rumored New York restaurant slated to take over the onetime Cat & Fiddle.
