The former Callahan's has been scrubbed away, revealing a swell, mid-century interior that reflects the original diner even better than its latest rendition. Ingo's Tasty Diner, which comes from the team behind La Grande Orange and The Misfit, opens tonight at 5 p.m. in Santa Monica with a farm-to-table approach to the diner concept.
Consider bites like a caesar salad, cheeseburger built with grass-fed beef and sharp Wisconson cheddar, or perhaps a white fish club sandwich.
Further down, cut into a Marin Sun Farms pork chop with a grilled root veggie hash, or a rotisserie leg of lamb with harissa yogurt. The influences come from everywhere, but at each step there's a pretty careful and intentional presentation of local purveyors and farmers, which is a nice thing for a diner to try and incorporate.
While Ingo's launches with dinner, breakfast and lunch service will come shortly after, with more of the greasy spoon staples you'll come to expect to see on the bill of fare. Until then, soak up this menu and catch an early look this week. Chef Shaun Werth helms the kitchen while Sarah Shifrin handles desserts and baked goods. GM Matthew Kretschmer will watch the front of house while Kevin Dunn manages spirits and wine.
