Esoteric and stylish food lifestyle site Life & Thyme is back with another video this week, focused on Alimento’s Zach Pollack. The popular chef is just about everywhere these days, not only manning the pass at his own restaurant; Pollack was also in consideration as a Food & Wine Best New Chef, and even took some time out to talk about his favorite burger during April’s Burger Week here at Eater.
The artsy three minute video takes Pollack back through Northern Italy, where he originally developed a love of Italian food. He stops at markets, samples the local cuisine, and talks at length about the specificity of a place like the Italian Alps, and how that’s helped to inform his popular Silver Lake restaurant Alimento.
