Simbal has been cooking for a few weeks now in a tucked-away location in Little Tokyo, but the restaurant will commence a series of guest chef appearances next week. Kuniko Yagi, who was seen last week helping out friend and chef Shawn Pham at the budding eatery, will soon conduct SNACK TIME, a pop-up concept that'll take place at Simbal's chef's counter. The $75 tasting menu has two seatings per evening at 6 and 8 p.m., with official dates on June 30, July 1, and July 2.

Yagi was most recently the executive chef at Hinoki & the Bird before she decamped late last year. When Yagi was traveling through Asia to do research for Hinoki, she asked Pham to help her do some R&D back in Vietnam during his tenure there. So perhaps she's just returning the favor a bit. Those who want to make a reservation for SNACK TIME can make one right this way.
