Ilan Hall Dropping Vegan Ramen Shop Inside Downtown LA's Grand Central Market

If you’ve been inside Grand Central Market lately, you might have noticed that ominous-looking black wrapper around one of the last remaining empty food stalls near Eggslut. As it turns out, there’s ramen to be had that’a way, and by none other than Ilan Hall himself.

The Gorbals chef is doing Downtown right, bringing in an all-vegan ramen shop to the popular longtime food hall. There was rumor for a while that Alvin Cailan would be doing what eventually became Ramen Champ on site there last year, but those turned to dust when Cailan chose Chinatown as his favorite new destination. (For what it's worth, Cailan also does a vegan ramen over at Far East Plaza, and it's delicious.)

Since then, the Grand Central Market team has been looking to fill a market need with one of the Southland’s most popular dishes, and the vegan twist is sure to appeal to curious everyday diners and meat-free lovers alike.

There’s no name for the upcoming concept as of yet, but former DTLA Gorbals chef Rahul Khopkar will be manning the stoves. When it lands later this year, it will join the just-announced Golden Road Cafe and Bruce Kalman’s pasta bar as the freshest new names to pack inside the already stuffed market.
