Lifestyle brand Hypebeast occasionally deigns to dabble in the food world, most recognizably with an occasional YouTube show called Hypebeast Eats. In one of their latest sessions, they follow Los Angeles’ own roving raw fish pop-up, Ceviche Project, as they attempt to simultaneously drop five courses on 80 diners from the patio of Messhall Kitchen in Los Feliz.

It’s always fun to watch the unflappable Octavio Olivas of Ceviche Project work, especially as he dishes up gorgeous plates of Central American and Mexican ceviche. Along the way, there's plenty of talk about the guiding mission of the pop-up as well: bring coastal flavors to as many people as possible, without ever repeating a dish.
