Chef Sydney Hunter III Leaves Petit Trois for Superba Snack Bar in Venice

A quick afternoon chef shuffle, as Sydney Hunter III joins the Superba Snack Bar team under executive chef Bryan Weaver. Hunter was, for a time, working with the Trois Mec team, helping to run things under Ludo at Petit Trois. He was familiar with the goings on, of course, after having worked on previous LudoBites pop-ups.

Late last month, whispers started that Hunter was no longer the chef de cuisine at Petit Trois, and now the world knows why — he’s joined up with Paul Hibler’s American Gonzo restaurant group. Hunter will continue chef de cuisine duties at Snack Bar in Venice, which just opened for lunch this week. The new lunch menu touts dishes like fluke crudo with brown butter, brisket meatballs, and cauliflower "t-bone" with corn succotash.
