Soon enough, you’ll be able to enjoy Bruce Kalman’s particular brand of pasta right in the heart of Grand Central Market. The Union chef’s long-gestating noodle bar Knead & Co. is finally ready for its debut next week — but you can take a look inside right now.
Done in collaboration with Union co-owner Marie Petulla, Knead & Co. actually plans to bring more than just pasta to the plate, offering a wider range of Italian-American classics like cannoli, meatballs, and a variety of breakfast dishes. Of course Kalman’s extruded noodles will always be the focus, though, which is why each of the 16 seats at the bar offer views into the so-called pasta lab area, where they’re being made fresh daily. There’s also a small market component, selling takeaway staples like pasta, cheese, butter, and more.
Knead & Co. opens next week inside Grand Central Market. Once official expect daily all-day hours, from 8 a.m. to 6 p.m. Sunday through Wednesday, and 8 a.m. to 9 p.m. Thursday through Saturday.
